Lemon-Honey Marinade for Chicken

I think of this as a Summer recipe—the perfect accompaniment to cold salads.

Serves 1-2

Times

Preparation:
15 minutes

Ingredients

  • 1 double-breast of chicken
  • ½ cup lemon juice
  • ¼ cup honey
  • 1 tsp chopped ginger
  • 1 tsp fresh lemon thyme

Method

Put all the ingredients (including the chicken) in a bowl and mix.

Tip

To ensure that the chicken retains the honey-lemon flavour:

  • Let the chicken marinate for at least 3 hours, preferably overnight.
  • Pour the marinade over the chicken on the barbecue and let the chicken cook in the marinade.
