Quick Pasta

As long as I have pasta and a tin of tomatoes in the pantry, I always have the basis of this quick meal.

Preparation:
15 minutes

Cooking:
10 minutes

Ingredients

  • 375g packet of pre-cooked pasta
    Try tortellini or ravioli.
  • 1 can of tinned tomatoes (approximately 400g)
  • Vegetables
    Try:
    • 1 small onion
    • 1 small zucchini
    • 1 medium capsicum
    • ½ cup mushrooms
  • 2 crushed cloves of garlic or 2 pinches of garlic powder
  • Pinch of seasoned pepper
  • ½ tsp of mixed herbs

Method

  1. Cook the pasta as per the instructions on the packet.
  2. Dice the vegetables.
  3. If you have vegetables such as onions, garlic or leeks, cook them in a saucepan with a bit of water until soft.
  4. Add the tinned tomatoes, remaining vegetables and the spices.
  5. Stir until heated through.
  6. Mix in the cooked pasta.

Notes

  • Instead of using pre-cooked pasta, cook 100g of dry, plain pasta such as penne or macaroni. Depending on the brand, plain pasta can have fewer calories, fat and sodium.
  • If you want meat, try adding some ham, bacon or cabanossi.
