Smoked Salmon Fettucine

A special dish!

I like to serve this dish for romantic dinners or special occasions such as anniversaries.

Serves 2

Times

Preparation:
15 minutes

Cooking:
20 minutes

Ingredients

  • 2 cups cooked fettucine
  • 100g smoked salmon
  • 1 Tbs butter or margarine
  • 1 Tbs plain flour
  • 1 cup skim milk
  • 1-2 cloves garlic, crushed
  • 2 Tbs chopped fresh dill

Method

  1. Cut the smoked salmon into small squares.
  2. Melt the butter in a saucepan over a low heat.
  3. Remove saucepan from heat and add the flour.
  4. Mix and then cook for about a minute over a low heat.
  5. Add milk a little at a time, continually stirring to prevent lumps.
  6. Continue stirring until sauce boils and thickens.
  7. Add smoked salmon and dill.
  8. Add garlic to taste.
  9. Add fettucine and stir through until heated.

Serve on its own or with a green salad.

Notes

  • You can use any plain pasta with this recipe. Try penne or macaroni.
  • For a creamier sauce use full cream milk or light evaporated milk.
  • Instead of smoked salmon and dill, try bacon, mushroom and onions.

For a vegetarian version:

  • Use soy milk instead of skim milk
  • Instead of smoked salmon and dill, use sun-dried tomatoes, mushrooms, spinach, capsicum and pine nuts.
