Dry Curry

A favourite for Hubby and me. The curry goes well with steamed rice.

Serves 2

20 minutes

Ingredients

  • 1 small onion or leek
  • 1 medium-sized apple
  • 1 medium-sized banana
  • ½ Tbs curry powder
  • 240g pork, beef or veal
  • 20g dessicated coconut
  • 20g sultanas
  • 1 Tbs fruit chutney
  • 1 Tbs jam
  • Water

Method

  1. Cut the onion, apple and banana into thin slices.
  2. Cut the meat into thin slices.
  3. Place the onion, apple, curry powder and 2 tablespoons of water in a saucepan and cook until the onion is soft.
    The water stops the ingredients from sticking to the bottom of the saucepan. Add more water as required.
  4. Add meat and stir until the meat is browned.
  5. Add banana, coconut, sultanas, fruit chutney and jam.
  6. Stir all ingredients until the meat is cooked.
