French Toast

Sunday breakfast is special in our house but waking up at 11:00 means ‘breakfast’ has to be quick and easy to make and filling enough to last to an early dinner.

Serves 2

Times

Preparation:
5 minutes

Cooking:
5-10 minutes

Ingredients

For each person:

  • 2-3 slices of bread
  • 2 eggs

Method

  1. Spray a frying pan with olive oil and place on a medium heat.
  2. Cut the slices of bread in two.
  3. Crack two eggs in a bowl and beat lightly with a fork.
  4. Coat both sides of 2-3 bread halves with the egg and then place in the frying pan.
  5. When bottom is golden brown, turn over and brown the other side.
  6. When done, transfer to a plate.
  7. Repeat steps 3 to 6 until all slices are done.

Serve the toast with your favourite spreads.

Tips

  • Make a small omelette with any leftover beaten egg.
  • If you do not have many eggs, add approximately a tablespoon of water or milk to the egg mixture.

    I like to use skim milk but be aware that the toast browns more quickly and can burn.
